Pumpkin Coffee Cake and Homemade Cinnamon Vanilla Bean Coffee Creamer

Play-dates are a great way to break up the day and get in a little social time for both kids and mamas. While most of the time play-dates are best kept simple, easy and fuss free, I do believe it is nice to make them a little extra special from time to time. A coffee cake is just the thing to jazz it up.

Pumpkin Coffee Cake with Brown Sugar Streusel

Ingredients

For Streusel:

  • 1/3 cup all purpose flour
  • 1/2 cup firmly packed light brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 5 tablespoons cold, unsalted butter, cut into small chunks
  • 1 cup chopped, lightly toasted pecans

For Cake:

  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter
  • 1 cup firmly packed light brown sugar
  • 2 large eggs
  • 1/2 cup canned pumpkin
  • 1/2 cup plain greek yogurt

For Glaze:

  • 1/2 cup powdered sugar
  • 1 1/2 teaspoons milk
  • 1 teaspoon pure vanilla extract
