Rosemary Parmesan Lemon Dressing {aka Summer in a Bottle}

Fall is my favorite season. Scarves, boots, hot chocolate, and pumpkins are my jam. I would be lying though if I said I don’t miss summer when it’s gone, especially the fresh and light foods that summer brings. Fall foods are all about comfort, savory flavors, and of course the almighty pumpkin, BUT I miss bright fresh flavors.

My answer to the heavier fall foods is this Rosemary Parmesan Lemon dressing.

The ingredients are year-round staples so you don’t have to search high and low for seasonal ingredients. It has a fresh flavor that brightens up any dish and can be used in so many different ways. Bonus points: it’s incredibly EASY. You can mix this in a mason jar or a blender! 

This dressing screams summer and is guaranteed to put a smile on your face. My favorite way to use this dressing is on my favorite salad pictured below. Drizzle this dressing on top and you’ll have the perfect lunch or dinner dish that is light and filling.

I also like to use this dressing to toss with some sautéed shrimp or chicken, or as a light dressing for a pasta dish such as cooked orzo and feta cheese.
