It’s almost St. Patrick’s Day! My family doesn’t really celebrate St. Patrick’s Day, but I do like to make themed treats for holidays.

My mom always made holiday treats and my brother and I loved to help. It’s one tradition I have kept going with my own children.

St. Patrick’s Day is a good holiday to make everything green. Rainbows and gold coins are also on par with all things green for St. Patty’s Day. The possibilities are endless. Since Lucky Charms have a leprechaun mascot and the marshmallows have all of Lucky’s different charms that fit St. Patrick’s Day perfectly, I decided to make a twist on Rice Krispie treats that use Lucky Charms. I have wanted to make Lucky Charms treats since I found out about them. It’s literally the best of both worlds…marshmallow cereal treats using pretty much the best cereal ever.

Rice Krispie treats are quintessential childhood treats. They are so easy and fun to make. Kids of any age can assist in making them.

These treats are made even better by the addition of dipping them into white chocolate. You can absolutely skip this step and just make the treats without chocolate.

What you need:

  • 6 cups Lucky Charms cereal
  • 4 Tbsp. unsalted butter
  • 10 oz. bag mini marshmallows plus 1 cup
  • 16 oz. white chocolate melting wafers

Directions:

  1. Place butter in a large saucepan and melt over low heat.
  2. Add marshmallows and stir until they are almost completely melted.
  3. Add Lucky Charms cereal and stir until fully coated with marshmallows.
  4. Pour into a greased 9×13-inch baking pan and spread out evenly.
  5. Let set at room temperature for about two hours.
  6. Cut into rectangles or squares (or any other shape you want).
  7. After cutting bars, melt white chocolate according to package instructions.
  8. Dunk the bottom of each bar into the melted white chocolate.
  9. Then place on a parchment paper or silicone baking mat lined baking sheet with the white chocolate face up.
  10. Let bars set at room temperature for about 10 minutes. Enjoy!
  11. Store bars sealed in an airtight container for up to a week.
