If you want to go for an easy breakfast while simultaneously winning the Best Mom award (because this recipe is sooooo good), let’s talk pancakes. It’s quick, it’s easy, and it has the word CAKE in it, so what’s not to love? Throw in some fruit and now we are eating (kinda) healthy, so cue the speech because it is time to accept that Mom award.
Pancake Batter Ingredients:
1 tsp salt
2 tsp baking powder
2 cups sifted flour
2 tbs sugar
2 eggs
2 tbs salted butter (for frying only)
2 tbs unsalted butter (to be mixed with the rest of the ingredients)
2 cups milk
Directions:
In a mixing bowl, mix all of the dry ingredients thoroughly. Then mix all of the wet ingredients in a second bowl. In the dry ingredients bowl, carve out a well to pour in the wet ingredients slowly. Mix with a fork. It is ok to have pea-sized lumps in your mixture. It is better to undermix than to overmix. Let this sit for 15-20 minutes while the griddle warms up.
I like to make a bunch of pancakes on the weekend and freeze some for the rest of the week when you need a quick breakfast. We also make sticks with the pancakes, instead of round ones to make it easier for my four-year old to eat. We put syrup in a little cup just for her so she can’t pour too much but still gets to pour it on her own. The best thing is all of the ingredients are probably already in your pantry!
