School is back in session. Fall will be here before we know it. Activities are picking up the pace and schedules have gone from summerific to jam packed crazy. We’re all running around now — doing car line and taking kids to gymnastics, soccer, football, you name it. I would venture to guess that for most of us moms, cooking gourmet dinners — shoot, even cooking dinner period — is just not going to happen in these crazy days of August.
Today I’m sharing my secret with you.
This is my go-to, so easy you can’t believe it, and so good you won’t forget it crockpot recipe. Give it a try one of these busy days ahead and let us know what you think!
Crockpot Pulled Pork
What you need:
– 1 1/2 pounds pork (I usually use a loin, but whatever you can find works; trim off the excess fat)
– 2 cups salsa (I use store-bought because…easy)
– 2 T dried oregano
– 2 T chili powder
– 2 T cocoa powder (unsweetened)
Combine the ingredients (all but the pork) and stir them together in the crockpot. Then add the pork and flip it to make sure it’s coated. Cook on high for 4-5 hours or on low for 8-9 hours.
This recipe takes fewer than five minutes to pull together, and it’s one the whole family loves. We usually do pork tacos with this because who doesn’t like a good taco night. It’s also awesome over rice. Cilantro lime rice. Really awesome that way. The pork comes out so tender, it basically pulls itself apart. It’s also a great dish to feed a crowd.
